Beans Plaki Recipe boils and simmers white beans in a sauce made with olive oil, onions, garlic cloves, tomato sauce, celery, carrot, bay leaf, oregano and wine vinegar to create this wonderfully delicious and tasty bean dish.


INGREDIENTS
3 cups dried white beans
1/2 cup olive oil 2 medium onions, chopped
2 medium onions, chopped
2 garlic cloves, crushed in a garlic press
1 can (8 ounces) tomato sauce
2 celery stalks, diced
1 carrot, diced
1 bay leaf
1 teaspoon oregano
1 teaspoon sugar
Salt and pepper to taste
Wine vinegar


DIRECTIONS
1: Place beans in a pot and cover with water. Bring to a boil. Simmer covered 2 to 3 hours, until just tender. Drain.
 
2: Heat oil in a saucepan, add onion, and cook until translucent. Add garlic, tomato sauce, celery, carrot, bay leaf, oregano, sugar, salt, and pepper. Simmer 5 minutes. (If sauce is too thick, add a little water.)
 
3: Add beans to sauce and simmer covered about 20 minutes, or until tender.
 
4: Serve hot or cold with a cruet of wine vinegar.
