Crispy French Fried Onion Rings

Crispy French Fried Onion Rings Recipe makes a very tasty, yet very easy onion ring appetizer using sweet Spanish onions, pancake mix, beer and oil.


INGREDIENTS
2 sweet Spanish onions
1 cup pancake mix
1/4 cup beer
Oil for deep frying heated to 375°F.
Salt


DIRECTIONS
1: Peel onions and cut into l/2-inch-thick slices; separate into rings. Combine pancake mix and beer to make a smooth, thick batter.
 
2: Dip onion rings in batter and fry, a few at a time, in hot fat until golden brown. Drain on absorbent paper-lined baking sheets.
 
3: Keep fried onion rings hot in oven until all rings are fried.
 
4: Note: To freeze fried onion rings, leave onion rings on lined baking sheets, place in freezer, and freeze quickly. Then carefully remove rings to moisture-vaporproof containers with layers of absorbent paper between layers of onions. Cover container tightly and freeze. To heat frozen onion rings, place rings on a baking sheet and heat in a 375°F oven for several minutes.
