Stuffed Acorn Squash Recipe

Stuffed Acorn Squash Recipe uses tasty acorn squash and stuffs with mixture of ground meat, celery, onion, apple, cooked rice, sunflower kernels, curry powder, egg, brown sugar and butter to create this tasty stuffed squash recipe.


INGREDIENTS
2 large acorn squash, halved and seeded
3/4 lb. ground beef
1 celery rib, chopped
1 small onion, chopped
1 medium tart apple, chopped
1 cup cooked rice
1/4 cup sunflower kernels
1 tsp. curry powder
1 egg, beaten
5 tsp. brown sugar, divided
1 1/2 tsp. salt, divided
4 tsp. butter, divided
1 cup water


DIRECTIONS
1: Invert the squash in two ungreased 13x9-inch baking dishes. Add water and cover with foil. Bake at 375°F for 40 - 45 minutes or until tender.
 
2: Meanwhile, cook the beef until done, place in colander to drain. Saute celery and onion over medium heat until tender. Add the apple, rice, sunflower kernels and curry and cook, stirring, for 2 minutes or until apple is tender. Remove from heat. Stir in the egg, 1 teaspoon brown sugar and 1 teaspoon salt. Stir.
 
3: Place squash cut side-up on a baking sheet. Place 1 teaspoon of the remaining brown sugar in each squash. Place 1 teaspoon of butter in each squash. Combine ground meat with apple mixture and stir well to mix. Fill each squash with meat mixture.
 
4: Bake, uncovered, at 375°F for 15 - 20 minutes or until heated through.
