Chicken Penne Rigate Soup Recipe

Chicken Penne Rigate Soup Recipe adds depth and more texture to regular Chicken Noodle soup and uses chicken breast, onion, celery, broth, oregano and basil to make this tasty chicken soup recipe.


INGREDIENTS
2 skinless boneless chicken breasts cut in 1/2 inch cubes
1 cup onion, chopped, medium
1 cup celery, chopped medium
1/2 tsp. oregano
1/2 tsp. basil
1/2 lb. Penne Rigate pasta
7 cups water
salt and pepper to taste
2 tsp. chicken bouillon


DIRECTIONS
1: Add onion, celery and one cup water to a large pot. Cover and bring to a boil. Cook for 5 minutes, stirring occasionally. Caution: do not let water completely evaporate.
 
2: Add 6 cups water to onion and celery mixture. Add chicken and stir well. Add Penne Rigate and stir well.
 
3: Add oregano, basil and chicken bouillon.
 
4: Boil for 12 minutes. Taste test. Add salt and pepper to taste. Enjoy!!
