Sweet and Sour Pork Recipe

Sweet and Sour Pork Recipe creates a delicious Chinese recipe using ingredients including pork, bell pepper, pineapple, soy sauce and cornstarch to make this easy but tasty sweet and sour pork recipe.

INGREDIENTS
|
1 lb. pork, tenderloin recommended
|
2 bell peppers
|
4 slices pineapple
|
6 cups peanut oil
|
For Marinade:
|
1/2 tsp. salt
|
1/2 tsp. soy sauce
|
1 Tbl. cornstarch
|
1 Tbl. cold water
|
1 egg yolk
|
For Sauce:
|
3 Tbl. vinegar
|
4 Tbl. sugar
|
4 Tbl. tomato catsup
|
4 Tbl. cold water
|
3 tsp. cornstarch
|
1 tsp. salt
|
1 tsp. sesame oil
|
For Coating Pork:
|
3 Tbl. or more cornstarch

DIRECTIONS

Remove as much fat as possible from pork. Pound pork with back of a cleaver to tenderize pork. (The back of a heavy butcher knife works well.) Cut pork into 1-inch cubes. Combine marinade ingredients and marinate pork for at least 1/2 hour.

Seed and devein bell peppers and cut into 1-inch squares, set aside. Cut pineapple into 1-inch squares, set aside. Combine all sauce ingredients and mix well to ensure cornstarch is dissolved.

Toss pork in cornstarch to coat well. Heat oil in wok or large skillet on high heat. When oil begins to shimmer, fry pork until brown and done, about 2 minutes. Remove pork and set aside. Allow oil to reheat, then fry pork again until crisp. Remove pork and set aside. Drain oil from wok or skillet.

Add 2 tablespoons of oil to wok and heat oil. Add bell pepper and pineapple stirring constantly and cook until bell pepper is soft but with a little crunch. Add sauce and cook, stirring all, until sauce thickens. Add pork and stir to coat pork with sauce. Serve over rice or noodles.
