DIRECTIONS
|
1:
Mix the harissa with the olive oil in a small bowl, or, if using home-made harissa, simply measure the required amount into a bowl. Add a little salt and stir to combine. Brush this mixture over the chicken wings so that they are well coated. Cook the wings on a hot barbecue or under a broiler for 5 minutes on each side.

|
2:
Once the wings begin to cook, dip the orange quarters lightly in icing sugar and grill (broil) them for a few minutes, until they are slightly burnt but not blackened. If you thread them on to skewers, it will be easier to turn them under the heat. Serve the chicken wings immediately with the oranges, sprinkled with a little chopped fresh coriander.

3:
Try making your own harissa if you have a blender. You will need 6 to 8 dried red chillies, 2 crushed garlic cloves, 1/2 tsp salt, 1 tsp ground cumin, 1/2 tsp ground coriander and 1 cup olive oil. Blend to a paste. To store, spoon into a jar and cover with olive oil.
