Chili Tomato Grilled Chicken Recipe is tasty grilled chicken which is basted and sauced in a mixture of onion, garlic, taco sauce, oregano, mustard and chili powder to create a delicious grilled chicken dish.

INGREDIENTS
|
2 tablespoons cooking oil
|
1/2 cup finely chopped onion
|
1 clove garlic, minced
|
1 chicken bouillon cube
|
1/2 cup hot water
|
1 can (8 ounces) taco sauce or
tomato sauce
|
1 teaspoon salt
|
1/4 teaspoon oregano
|
2 tablespoons vinegar
|
1 tablespoon prepared mustard
|
4 to 6 broiler-fryer chicken quarters
|
1 tablespoon mild chili powder
|
|

DIRECTIONS
|
1:
In small fry pan, heat oil to medium
temperature. Add onion and garlic; stir
and cook about 3 minutes or until clear
and soft. Dissolve bouillon cube in hot
water; add bouillon, sauce, salt, oregano,
vinegar and mustard to fry pan.
Dip chicken into sauce mixture, then
lightly sprinkle chili powder on all sides
of quarters. Add remaining chili powder
to sauce; bring to boil and remove from
heat.

Just before grilling, redip each
chicken quarter in sauce. Cook on charcoal
grill until
chicken can easily be pierced with fork
(the white meat will be done before the
dark) and juices run clear (not pink). Turn every 10 minutes during
grilling, basting with sauce during last
half of grilling time.
