Sour Cream and Onion Potato Salad uses Yukon gold potatoes, sour cream, mayonnaise, salt and pepper, garlic powder, scallions, celery, and chives in creating this outstanding potato salad recipe.

INGREDIENTS
2 lbs. Yukon gold potato, peeled and cut into 2-inch chunks
1/2 cup sour cream
1/4 cup mayonnaise
1 tsp table salt
1/2 tsp black pepper
1/2 tsp garlic powder
2/3 cup scallions, chopped
1/2 cup celery, chopped, thinly sliced
2 tbsp chives, thinly sliced (optional)


DIRECTIONS
1: Cut the potatoes into quarters and place in a large saucepan. Cover the potatoes with cool water; bring to a boil.
 
2: Reduce the heat to medium-low and simmer until the potatoes are just tender, 17 to 20 minutes. Drain the potatoes and cool slightly.
 
3: In a large bowl, stir together the sour cream, mayonnaise, salt, black pepper, and garlic powder. Add the chopped potatoes, scallions, and celery to the sour cream mixture; toss gently to coat. Spoon the potato salad into a serving bowl; garnish with the chives, if desired.
 
4: Serving size: about 3/4 cup.
