Butterflied Leg of Lamb Southern Citrus Barbecue Recipe grills butterflied leg of lamb after marinating in a marinade of salt and pepper, ground cloves and allspice, garlic, hot pepper sauce, brown sugar, grapefruit juice and lemon peel.

INGREDIENTS
|
6 to 9 pounds butterflied leg of lamb
|
1/2 teaspoon salt
|
1/4 teaspoon ground pepper
|
1 teaspoon ground cloves
|
1 teaspoon ground allspice
|
2 cloves garlic, minced
|
Few drops hot pepper sauce
|
3 tablespoons brown sugar
|
1 1/2 cups grapefruit juice
|
1 tablespoon grated grapefruit or lemon peel
|

DIRECTIONS
|
1:
Place lamb in large glass or enamel bowl. In measuring cup, combine remaining ingredients. Pour over lamb. Cover and refrigerate several hours or overnight. Drain lamb, reserving marinade. Grill lamb 4-6 inches over charcoal or source of heat for 1 hour and 15 minutes or until meat thermometer inserted in thickest part registers 140°F for rare, 150°-155°F for medium and 160°F for well-done. Baste frequently with marinade.
